Surf clam harvesting takes place along New Zealand’s shoreline in USFDA classified waters that are rich in a year-round production of phytoplankton. The rough surf zone, where the native molluscs exist, provides a continuous bloom of diatoms for optimum feeding and growing conditions.

Cloudy Bay Clam's research over many years has resulted in the development of a non-invasive hydraulic "clam rake" harvester. The rake is towed along the seabed liquefying the sand and scooping underneath the clams, separating them without sea-bed compression or damage to the mollusc.

The clams are gathered into an open mesh cage for processing, reducing the gathering of non target species. The clams are kept immersed in water and protected from the elements. This technique also minimizes damage to the surf zone, which is extremely robust to disturbance.
